This sake is Daiki our chef’s favourite sake and is particularly unique being a pressing of the original traditional yamahai starter ferment which is the heart of the sake. We get rice bran, mushroom and vanilla on the nose followed on the palate by mouthwatering balance of acid and sweet, reminiscent of green apples, pears and elderflower with a slight spritz. This sake is the perfect aperitif, it has a very clean nose with lemon, citrus peel, and a hint of cacao. On the palate it is quite refreshing with soft acid more lemon and some pear. This would make a fresh start to your meal and would go great with oysters, crudité, or lighter dishes.

This is a really lovely introduction to sake and the perfect aperitif. Very pretty in style it is soft and fruitful with rice pudding and melon on the nose and complex yet wonderfully dry on the palate. The slow pressing of the “secret” rice creates depth and interest.
